Scrambled Apple Pancake Crisp

Here is a super easy dessert that I made up when I was bored and craving something sweet.  It serves 2-4 people depending on how much you’re serving.  Top with Vanilla Ice Cream or Whipped Cream!

Scrambled Apple Pancake Crisp

2 medium sized apples (I use granny smith, but any kind will do)

1/8 cup of brown sugar

2 tablespoons of butter

1 cup of biscuit mix

3/4 cup of milk

1 teaspoon of vanilla

Melt butter in a large frying pan on low heat and add brown sugar.

Cut apples into small chunks and add to the pan

Cook until apples brown and a syrup begins to form.

(add more butter and brown sugar if you want more syrup)

Drain syrup into a separate container

Mix biscuit mix, milk and vanilla lightly in a small bowl with a fork.

Pour biscuit batter into the pan with the apples.

Let it cook for a few seconds and then start scrambling!

When all batter appears to be cooked, scoop into individual serving bowls.

Top with remaining apple syrup, and whipped cream, or vanilla ice cream.

***  If you have it on hand and are feeling REALLY LAME, you can just use apple pie filling and skip to the biscuit step.  Definitely not as good, but it saves you a few minutes of time.

***  For the EXTRA LAME they actually make instant pancakes in a spray can (like a whipped cream can) that you can just squirt on top of the apples.
